Norwegian Applesauce-Breadcrumb Cake
Adapted from the Stony Run, Baltimore FriendsSchool Family Cookbook, 1982.
2 tablespoons sugar
½ teaspoon vanilla
16 ounces unsweetened applesauce (1¾ cups)
1¼ cups dry bread crumbs
½ cup (1 stick) butter, melted
1 cup heavy cream, whipped
6 tablespoons current jelly (or any kind)
Preheat oven to 450F. Mix sugar, vanilla, and applesauce. Butter a cake pan and alternate applesauce and breadcrumbs, ending with crumbs. Pour melted butter over this mixture. Bake 25-30 minutes. Serve hot, topped with whipped cream and a tablespoon of jelly for each slice. Serves 6.
