Spiced Pork with Citrus-Apple Slaw and Rice


  • 2 tablespoons taco seasoning

  • 1 teaspoon smoked paprika

  • 1 lb pork tenderloin

  • 2 tablespoons olive oil, divided

  • 2 GingerGold, or McIntosh Apples, peeled & cored

  • 1 Naval orange

  • 1 small jalapeño pepper

  • 2 tablespoons fresh cilantro, finely chopped

  • 1/4 cup green onions, thinly sliced

  • 2 tablespoons apple cider vinegar

  • 1/4 teaspoon kosher salt

  • 1/4 teaspoon pepper

  • 1 cup brown rice, cooked


  1. Combine taco seasoning with paprika. Place pork in shallow dish. Coat with 1 tablespoon oil and sprinkle evenly with seasoning mixture. Let stand 30 minutes to marinate.

  2. Preheat grill (or grill pan) on medium. Cook brown rice using preferred method.

  3. Meanwhile, julienne apples. Zest orange (1 teaspoon); remove orange segments and squeeze remaining membrane for juice (2 teaspoons). Slice jalapeño thinly (removing membrane and seeds if desired); chop cilantro. Place in a medium bowl with remaining 1 tablespoon olive oil, and gently stir until blended.

  4. Place pork on grill; grill 10–12 minutes, turning often or until grill-marked and 145°F. Let stand 5 minutes to rest before slicing.

  5. Serve pork over rice with slaw.
