Clover Club



  • 2 ounces local gin

  • 3/4 ounce lemon juice

  • 1/4 ounce raspberry syrup (recipe follows)

  • 1 egg white

  • 1 teaspoon sugar

Raspberry Syrup:

  • ⅔ cup water

  • ⅔ cup white sugar

  • 1 cup fresh red raspberries


Raspberry Syrup:

  1. Bring water and sugar to a boil in small saucepan, stirring occasionally, until sugar is dissolved, 5 to 10 minutes. Remove saucepan from heat and stir in raspberries. Mash mixture using a potato masher or fork. Let mixture steep for at least 1 hour.

  2. Drain mixture through a fine mesh strainer, pressing raspberry pulp with a spatula to extract as much liquid as possible. Discard solids and store syrup in a sealed container in the refrigerator.


  1. Pour the ingredients into a cocktail shaker with ice cubes.

  2. Shake vigorously (more than normal to properly mix the egg and sugar).

  3. Strain into a chilled cocktail glass, serve, and enjoy!
