INGREDIENTS

  • 1 loaf day old french bread

  • 2 cups cherry tomatoes halved

  • 1 cup fresh cherries halved & pits removed (we like using a selection of sweet cherries)

  • 2 tbsp toasted pepitas (pumpkin seeds)

  • 1 package halloumi cheese, grilled and cut into smaller pieces

  • Fresh basil

  • Olive oil

  • Red wine vinegar

  • Honey

INSTRUCTIONS

  1. Slice your bread into 1 inch pieces and drizzle with olive oil on both sides.

  2. Preheat your grill to medium high. BBQ on both sides until grill marks or a little char occurs.

  3. Chop into bite size pieces. You will want between 5-6 cups.

  4. Lightly toss cherries, tomatoes, halloumi cheese, grilled bread and dressing.

  5. Sprinkle with fresh basil and pepitas. Serve immediately.

Notes:

To make dressing mix together 1/4 cup each oil and red wine vinegar. Add in a little honey or agave syrup and sprinkle of salt and pepper. Whisk until combined.
